- Grilled Cheese Gets an Update from NPR. Three versions of the grilled cheese sandwich - the Southwest sounds best to me.
- Green chile mac and cheese from the Luna Cafe just looks and reads like heaven as does their New Year's Day Black Bean Ancho Chili.
- Baked apple macaroni and cheese from Mlive goes in a different direction but sounds equally scrumptious.

Grilled cheese and mac and cheese are all I eat as a vegetarian. Thank god for new twists on my dietary staples! And, I agree about the Southwest grilled cheese. Sounds delish!
You might want to branch out into other vegetarian staples such as salad or fruit or even vegetables - don't know if you were aware, but that's actually where the word vegetarian comes from.
Enjoy the green chili mac and cheese. That's the one that's got me tempted and longing for a kitchen.
