Holy crap was last night's dinner awesome.
The Girl made the cover dish from Sunset magazine - some sort of west/southwest regional magazine. It was "spicy chicken posole with avocado and lime", and she admittedly avoided the avocado but kept in everything else.
Wow, fantastic soup with great chili flavor from the chili powder (New Mexico bought in, oddly enough, New Mexico a few years back) and roasted poblanos. Nice shredded/chopped chicken (1 chicken breast made three bowls of soup) and hominy for body.
Outstanding stuff...very high recommendation.
Wish she'd made a full batch.
I'm craving cornbread now, however.
